When we were kids my older brother Steve really liked pea soup. He wouldn’t make the pea soup but he would ask my mom to make it and it was always wonderful. A few years ago for Christmas I used this pea soup in a jar recipe as a gift for him.
This would also make for a great mix to take on a camping or hiking trip, if you had the time to sit around a camp fire while it cooked.
Creamy Pea Soup (gift-in-a-jar version)
Ingredients:
- 1 package country gravy mix
- 1 tablespoon chicken bouillon granules
- 2 teaspoons imitation bacon bits
- 2 teaspoons celery flakes
- 2 teaspoons dried minced onion
- 1 teaspoon dried parsley flakes
- 1 1/4 cups dried split green peas
- 1 bay leaf
Put everything into a 3 quart saucepan.
Add 6 cups water; heat to boiling, stirring often.
Reduce heat; cover and simmer for 1 to 1 1/2 hours or until peas are tender,
stirring frequently to prevent peas from sticking.
Remove bay leaf.
Serve soup with dollop of sour cream and bacon bits, if desired.
Makes 6 servings.To make as a gift add in layers to a one pint, wide mouth mason jar:

Mix to gather chicken bouillon granules, bacon bits, celery flakes, minced onion and parsley flakes. Add to the Jar.
Add Bay Leaf.
Add dried peas.
